Chili Rubbed Pork Tenderloin with Pineapple Salsa

  • 2- 1.5 pound Pork tenderloins ( you can make only one if desired )
  • ¼ cup chili powder
  • 1 Tbsp garlic powder
  • pepper and salt to taste
  • Tbsp olive oil
  • ½ a pineapple chopped small
  • 1 jalapeno, membrane and seeds removed chopped
  • 2 Tbsp cilantro, chopped
  • ¼ cup red onion, diced small
  • 1 lime, juice of
  • 1 tsp cumin
  • salt and pepper to taste
  1. Preheat oven 425
  2. Combine chili powder, garlic powder, salt and pepper in a small bowl
  3. Rub olive oil over both tenderloin
  4. Rub the spices all over the pork on all sides massaging it with your hands
  5. Place in a foil lined baking dish (for easier clean up)
  6. Place in oven and bake for 1 hour usually about 20-25 minutes per pound
  7. Remove from oven and let stand about 5 minutes before slicing
  8. SALSA-Combine all ingredients in a bowl and mix together
  9. Top tenderloin with salsa and enjoy!
