Ah, I just can’t help myself: I love crockpot meals! So here is another one that I must share with you. This crockpot tuscan soup is scrumptious. The prep was incredibly simple and quick. I literally had this all in the crockpot in 10 minutes. I was doing some online Christmas shopping, and when I looked at the clock, I jumped up realizing I had less than fifteen minutes to get this put together before I had to walk out the door for an appointment. Obviously I was rushing, that may be why I got it put together so fast, but I did it. And even though I rushed, it turned out great!
I made these fabulous cheddar and garlic drop biscuits with the soup, and it just topped the meal off! They weren’t complex biscuits. I got it off the Bisquick box 😉 I think any type of biscuits, bread, or even garlic bread would go well with this soup. Try this out and add it to your crockpot recipe list. You won’t be disappointed. Enjoy!
- 1.5 pounds boneless skinless chicken thighs, cut into 1 inch pieces
- 1 can of tomato paste
- 1 can cannelloni beans, drained and rinsed
- 32 oz chicken broth
- 1 cup yellow onion, chopped small
- 5 cloves garlic, minced
- 1½ tsp fresh thyme
- 1½ tsp fresh sage, chopped small
- salt and pepper to taste
- 6 oz package of fresh baby spinach
- 1 tsp fresh rosemary chopped
- fresh grated parmesan cheese, for garnish
- Put the first 9 ingredients into the crockpot combine and set on high for 4 hours or low for 6
- After cooking time add the rosemary and spinach
- Cook for an additional 10 minutes
- Serve and garnish with parmesan cheese (optional)
