Corn and black bean salsa is something that can be tossed together quickly. I love it because it tastes amazing and not a lot of time has to be spent in the prep.
I recently made this for my sister Joanna’s birthday party. I already told her I would bring some of my homemade salsa so I figured why not throw this together as another option for the party. Not really sure because of the cocktails I consumed, she had a wine tasting prior to bringing out all the food, but I think people enjoyed it lol. I know I did!
This quick salsa can also be a topping for your favorite tacos or even on a burrito bowl.
Adding in another ingredient such as a diced up avocado would be delicious! Possibilities are endless! Just prep, serve and enjoy!
- 2 Cups frozen corn
- 1 -15 oz can of black beans, drained and rinsed
- ¼ cup red onion, diced
- 1 clove garlic, minced
- ¼ cup cilantro, roughy chopped
- 1 -14.5 oz can fire roasted tomatoes (drain out extra juice)
- 1 jalapeno, diced
- juice of one lime
- 1 tsp garlic salt
- salt
- pepper
- In medium bowl combine all ingredients
- Mix well to combine
- Serve with tortilla chips
