No-Bake Coconut and Oat Clusters

No-Bake Coconut

There is something about coconut that makes me ohh so happy.  I love it, and I grew to love it more because of my older sister Abby.  When we were teenagers, she loved coconut macaroons; well she loved basically anything with coconut.  And now thanks to her, I have a love for anything with coconut.

No-Bake Coconut and Oat Clusters! You will fall in love with this little clusters of goodness! A quick and easy dessert you can have ready to eat in 30 minutes

Now pairing coconut with peanut butter AND chocolate!  Now that is a dream!  The flavors in these clusters are perfect, and I can’t get enough of these!  My kids love them, too.

Serves: 16-20
Ingredients
  • 2½ cups quick oats
  • 1 cup shredded coconut
  • ⅔ cup honey
  • ½ cup coconut oil
  • 1 cup peanut butter
  • 2 tsp vanilla extract
  • 6 Tbsp cocoa powder
  • Coconut sugar and himalayan (or kosher) salt to sprinkle on top
Instructions
  1. In large bowl mix together oats and coconut flakes
  2. In a pot over medium heat combine honey, coconut oil and peanut butter stir continuously until melted and well combined
  3. Remove pot from heat and add oat and coconut mixture stirring to combine add vanilla extract and cocoa powder. Continuing stirring until mixture is thick and well combined
  4. Line two baking sheets with parchment paper and drop large spoonfuls of mixture onto baking sheets
  5. Sprinkle with coconut sugar and himalayan or kosher salt (optional) Place cookie sheets in the freezer until they harden. About 15 minutes or until ready to serve.
  6. When serving remove from freezer and thaw for a few minutes and enjoy!
  7. Store any leftovers in a sealed container in the freezer

    Yum! At first, these treats appear to be quite indulgent, but they’re actually full of healthy ingredients. It’s like a cross between an oatmeal cookie and a macaroon. Love it 🙂

    These are incredible!!!! I had a huge chocolate craving today so decided to try these, and oh YUM!!!!!! I didn’t have peanut butter on hand so I used almond butter instead & they were so delicious! Just the right amount of sweetness, and really satisfying so I didn’t feel the need to eat the whole batch (even though I wanted to ?)

    I love no-bake cookies, but I’ve never thought to add coconut to them! What a great idea! These look absolutely delicious too.
