Ah meatloaf. Growing up, I was not a fan. My mom would send me to school the next day with a cold leftover piece in a sandwich and I would cringe taking it out of my lunch box, a la A Christmas Story. As I got older, I slowly started to enjoy meatloaf but only if I had to eat it. I didn’t start loving meatloaf until I starting making it for my family. My husband used to tell me “I hate meatloaf. Don’t ever make it.” So I never made it for the family until maybe 6 years ago. I really wanted to try it out on my own, so I told him if he hated my meatloaf, I would never make it again. Lets just say it has become a staple in our home! He loves it now and the kids do too, mainly because they have been eating it since they could start eating “real” food.
Meatloaf is really one of those ultimate comfort foods. On a cold day, it’ll warm you up, bring back memories of home, and give you a sense of comfort. I hope you enjoy this recipe or even possibly find a new love for good, old fashioned meatloaf.
- 1 lb ground beef
- ½ cup yellow onion chopped small
- 3 cloves of garlic minced
- 1 slice of bread broken up into tiny pieces
- 1 egg
- 1 tsp milk
- ¼ tsp pepper
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp dried mustard
- 2 Tbsp worcestershire sauce
- Sauce
- 1 cup ketchup
- 3 Tbsp brown sugar
- ¼ tsp dried mustard
- Preheat oven to 350 degrees f.
- Sauce: In a small bowl whisk together the ketchup, brown sugar and dried mustard. Set aside
- Meat Loaf: In large bowl add all meatloaf ingredients and combine and mix together with your hands
- in a large baking dish take meat mixture and mold into a loaf.
- Place in oven for 1 hour until it looks dark brown in color or until the internal temperature is 160 degrees.
- Put a small layer of sauce on top and bake for another 10 minutes
- Remove from oven and let stand for 5 minutes
- Slice,Serve and Enjoy
