Rosemary Oven Roasted Potatoes

  • 3 lbs red potatoes, washed and cut into small pieces
  • 4 cloves of garlic, pressed or minced
  • ¼ cup of olive oil
  • ¼ tsp pepper
  • ½ tsp salt
  • ½ cup of shredded parmesan cheese
  • 2 Tbsp fresh rosemary, chopped
  1. Preheat oven to 400
  2. In large bowl add all ingredient and mix until potatoes are covered
  3. Line a baking sheet with nonstick aluminum foil
  4. Spread potatoes out on baking sheet
  5. Place in oven and cook for 45 minutes mixing about halfway through the time
  6. They should be a golden color and tender when pierced with a fork
  7. Ovens vary and the size of potatoes vary so keep an eye on them
