Caprese Stuffed Portobellos

Ingredients
  • 3 Portobello mushroom caps, rinsed and patted dry
  • 1 cup shredded mozzarella cheese
  • ½ cup cherry or grape tomatoes, cut in half
  • 2 Tbsp fresh basil, sliced small
  • salt and pepper to taste
Instructions
  1. preheat oven to 350
  2. prepare a baking sheet with aluminum foil
  3. place mushroom caps on prepared pan
  4. evenly fill each cap with mozzarella cheese
  5. add tomatoes and place in preheated oven
  6. bake for 15 minutes until cheese is melted and bubbling
  7. remove from oven
  8. sprinkle with fresh basil
  9. add salt and pepper to taste
  10. serve and enjoy!
