Perfect Breakfast Potatoes

Perfect breakfast potatoes. Made with red potatoes, bacon, green onion, and just a hint of maple syrups.
Serves: 4-6
  • 2 lbs red potatoes - skin on
  • 5 pieces of bacon, cut into small pieces
  • 1 tsp garlic powder
  • 2 tablespoons pure maple syrup
  • 2 green onions, chopped
  • ½ teaspoon salt, more to taste
  • 1 teaspoon fresh ground pepper
  1. Wash the potatoes and cut them into small square pieces. set aside.
  2. Cut the bacon into small pieces. Add to a large skillet over medium-high heat. Cook the bacon for 2-3 minutes. remove the bacon and place on a plate. Try to make sure that most of the grease stays in the pan.
  3. Add the potatoes to the bacon grease and cook for 8-10 minutes, stirring often, and until golden brown. Once golden brown add back in the bacon for 3-5 minutes or until the bacon is crisp. Stir in the garlic powder, salt, pepper, maple syrup, and green onion. Let that cook for another minute or two and serve!
