Crockpot Tuscan Soup

Ingredients
  • 1.5 pounds boneless skinless chicken thighs, cut into 1 inch pieces
  • 1 can of tomato paste
  • 1 can cannelloni beans, drained and rinsed
  • 32 oz chicken broth
  • 1 cup yellow onion, chopped small
  • 5 cloves garlic, minced
  • 1½ tsp fresh thyme
  • 1½ tsp fresh sage, chopped small
  • salt and pepper to taste
  • 6 oz package of fresh baby spinach
  • 1 tsp fresh rosemary chopped
  • fresh grated parmesan cheese, for garnish
Instructions
  1. Put the first 9 ingredients into the crockpot combine and set on high for 4 hours or low for 6
  2. After cooking time add the rosemary and spinach
  3. Cook for an additional 10 minutes
  4. Serve and garnish with parmesan cheese (optional)
