I have noticed that I have been posting a lot of sweets lately and most of them have contained chocolate in them. Well, these cacao date energy bites are a nice change up from those other treats.

Simple, no bake energy bites that are good for you! Made with cacao powder, dates, cashews, and cacao nibs, these are amazing superfood bites!They are really simple to make, just throw everything in a large food processor with a few tablespoons of water, roll into tablespoon size balls and they are done. I will say that they are an acquired taste and texture. If dates and cacao powder are something that you like, then you will love these energy bites. The texture is almost like an Oreo truffle.Simple, no bake energy bites that are good for you! Made with cacao powder, dates, cashews, and cacao nibs, these are amazing superfood bites! We make them and keep them in the fridge for the week for a quick and easy snack throughout the week.

Serves: 14-16 bites
Ingredients
  • 1 cup cashews, unsalted
  • 1 cup dates, pitted
  • ⅓ cup cacao powder
  • ½ teaspoon salt
  • 2-3 tablespoons water
  • ¼ cup cacao nibs (optional)
Instructions
  1. In a large food processor blend the cashews for 30 seconds. Add in the dates, cacao powder, salt and water. Mix until well combined. Add more water as needed. Mix in the cacao nibs (make sure to not over blend as they will break up too much).
  2. Roll out tablespoon size balls and place in an air-tight container. Keep in the fridge for up to one week.
